Ingredients
Method
- Cook the pasta in salted water until just shy of al dente. Reserve 1 cup pasta water, drain and set aside.
- Mix the Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, black pepper and cayenne. Pat the chicken dry and coat both sides.
- Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear the chicken 5 to 6 minutes per side until golden and 165°F inside. Rest on a plate.
- Lower the heat to medium, melt the remaining butter, scrape up the browned bits, and cook the garlic for 30 seconds.
- Add the chicken broth, bubble for 1 minute, then add the heavy cream and simmer 3 to 4 minutes until thickened.
- Stir in the Parmesan a handful at a time until melted, loosening with pasta water if needed.
- Slice the rested chicken thinly across the grain.
- Toss the pasta in the sauce, fold in the sliced chicken, warm through for 1 minute and serve with parsley.
Notes
Pound chicken to even thickness so it cooks evenly and stays juicy. Do not move the chicken while it sears; let the crust form before flipping. Adjust cayenne to taste: 1/4 teaspoon is warm, 1/2 teaspoon is properly spicy. Leftovers: refrigerate up to 3 days and reheat gently with a splash of cream or milk; do not freeze.
