Ingredients
  

  • 2 tablespoons butter, plus extra for topping
  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 2 cups beef broth
  • 1 packet onion soup mix
  • 1 cup uncooked long-grain white rice
  • 1 cup shredded cheese
  • Fresh thyme, for garnish

Method
 

  1. Preheat the oven according to your rice package directions, generally around 375°F.
  2. Melt the butter with the olive oil in an oven-safe skillet over medium heat.
  3. Add the thinly sliced onions and cook until softened and lightly golden.
  4. Pour in the balsamic vinegar and stir, scraping any flavorful browned bits from the skillet
  5. Add the beef broth and onion soup mix. Whisk until the soup mix dissolves, then bring the mixture to a gentle simmer.
  6. Turn off the heat. Add the rice and spread it evenly throughout the skillet.
  7. Place small pieces of butter over the rice. Cover the skillet with its lid and bake until the rice is tender and has absorbed the broth
  8. Sprinkle the shredded cheese over the cooked rice. Broil until the cheese is melted, bubbly, and golden
  9. Garnish with fresh thyme and serve warm.

Notes

  • The onions only need to become lightly golden; they do not need the long caramelizing time used for traditional French onion soup.
  • Spread the rice into an even layer before baking so it cooks consistently.
  • Gruyère gives the dish a classic French onion flavor, while mozzarella creates a stretchy, golden topping.
  • If your skillet is not oven-safe, transfer the mixture to a covered baking dish before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
  • Add a splash of beef broth or water when reheating if the rice seems dry.
