Ingredients

  • 4 cups frozen strawberries
  • ½ cup canned coconut milk or pineapple juice
  • 3 tablespoons honey or granulated sugar to taste
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Fresh strawberry slices or mint leaves for serving (optional)

Method

  1. Let the frozen strawberries sit out 3 to 5 minutes to soften slightly.
  2. Add all ingredients to a high-powered blender or food processor.
  3. Blend, tamping or scraping down, until thick and smooth like soft serve, adding liquid 1 tablespoon at a time only if needed.
  4. Taste and adjust the sweetness.
  5. Spoon into a piping bag fitted with a large star tip.
  6. Pipe into chilled cups in a tall swirl.
  7. Freeze 20 to 30 minutes for a firmer swirl, if you like.
  8. Garnish with strawberry slices or mint and serve immediately.

Notes

  • Full-fat canned coconut milk gives the creamiest texture.
  • Add liquid slowly; too much turns the whip into a smoothie.
  • Serve right away for the best soft-serve texture.
  • Leftovers freeze well for up to a month; soften and stir before scooping.
