Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes
Servings: 6 Meximelts

Ingredients

For the Meximelts:
  • 1 pound ground beef
  • 6 small flour tortillas
  • 1 cup shredded sharp cheddar cheese
  • 1 packet taco seasoning
  • ¼ cup waterSalt and black pepper, to taste
For the Pico de Gallo:
  • 2 medium tomatoes, finely chopped
  • ½ small onion, finely chopped
  • 1 jalapeño, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice
  • Salt, to taste

Method

  1. Combine the chopped tomatoes, onion, jalapeño, cilantro, lime juice, and salt in a bowl. Mix well and refrigerate.
  2. Heat a large skillet over medium-high heat. Add the ground beef, break it apart, and season with salt and pepper.
  3. Cook until the beef is completely browned with no pink remaining. Drain the excess grease.
  4. Return the skillet to the heat. Add the taco seasoning and water, then stir well.
  5. Bring the beef mixture to a gentle boil, reduce the heat, and simmer for about 7–10 minutes, until most of the liquid has been absorbed.
  6. Lightly dampen paper towels with water and place the tortillas between them. Microwave for about 20 seconds to soften.
  7. Add cheese, seasoned beef, pico de gallo, and more cheese to the center of each tortilla. Roll each tortilla tightly around the filling.
  8. Wrap the Meximelts in paper towels and microwave for about 20–35 seconds, until the cheese is melted and gooey. Serve immediately.

Notes

  • Sharp cheddar, Mexican blend, or Pepper Jack cheese can be used.
  • Use store-bought salsa instead of homemade pico de gallo for a quicker option.
  • Add extra jalapeños if you prefer more heat.
  • Don’t overcook the beef until it becomes completely dry.
  • Warm the tortillas before rolling to prevent cracking.
  • The exact microwave time can vary, so heat just until the cheese melts.
  • Leftovers can be refrigerated in an airtight container and gently reheated.
